- `cy.request()` now supports an `encoding` option that can be used to set the encoding of the response body, defaulting to `utf-8`. Addresses [#2029](https://github.com/cypress-io/cypress/issues/2029) and [#3576](https://github.com/cypress-io/cypress/issues/3576).
