_This adds a new factory method `pocketbase.NewWithConfig(pocketbase.Config{})` where `config` replaces the setters `DefaultDebug()`, `DefaultDataDir()`, `DefaultEncryptionEnv()`, `ShowStartBanner()` (this way it'll allow us to add new config options more easily in the future)._
